**Let’s Look at…. My Holiday Menu** {11.11.2020}

Happy Wednesday!! Today, I’m linking up with Shay from MixandMatchMama and Erika from ALittleBitofEverything to talk about our Holiday Menu. 

I’m sure our Holidays are going to look a little different this year, but I’m sharing what I cook for a normal meal/menu during Holidays. I usually have Christmas lights twinkling, a candle burning and Christmas movies playing all while I’m mixing things up like a mad woman Betty Crocker. 

For Thanksgiving the past few years we have gone to Tennessee. We have just eaten out at one of the restaurants that serves the big meal. For just the three of us, it has been perfect. 

Years prior to this, I would typically make some sides and a dessert. Something to the extent of creamed corn, mac-n-cheese, fried okra, broccoli casserole…. For dessert, possibly an apple cake or some type of cheesecake. 

Anyone else feel me? 

For most of our Christmas gatherings, we make apps. I am definitely here for it. I love a good appetizer and am about to share some of my favorites. Hopefully you’ll get some inspiration! 

My first recipe is definitely a crowd pleaser. I’ve been making this for years, and I always get requests for this one. 

Buffalo Chicken Dip

3-4 chicken breasts (cooked and shredded)

3/4 c. Ranch dressing 

1/4 c. Wing Sauce (Franks)

1 1/2 package cream cheese (softened)

1 c. shredded sharp cheese

Preheat oven to 350 degrees. Mix first 4 ingredients together. Put in a greased 13×9 casserole dish. Bake 15 min. Take out and sprinkle cheese on top. Continue to cook for 20-30 minutes until bubbly. 

Serve with Tostitos chips.

These are a new favorite that I just started making. The ingredients sound a little interesting, but trust me, they’re delicious! 

Cheesy Bacon Rotel Cups

3 (1.9 ounce) boxes frozen Mini Phyllo Shells

1 c. Mayonnaise

1 (10 oz) can Rotel tomatoes (drained)

1/2 c. chopped, cooked Bacon OR 1 (2.8 oz) bag Real Bacon Bits

1 1/2 c. shredded Colby and Monterey Jack Cheese

Preheat oven to 350 degrees. Remove Phyllo shells carefully from the boxes. No need to thaw. Place shells onto large baking sheet. 

In a large bowl, mix together the mayonnaise, Rotel tomatoes, and bacon pieces. Once combined, stir in the cheese. Scoop 2 Tablespoons of filling into each phyllo shell. 

Bake for 15-20 minutes or until golden and cheese is melted. 

That’s it! Delicious!

Ham and Cheese Sliders

1 12-count package of Hawaiian sweet rolls (sliced in half- large slab on top and large slab on bottom) 

3/4 lb. cooked deli ham, thinly sliced

3/4 lb. Swiss cheese, thinly sliced

1/2 c. (1 stick) unsalted butter, melted

1 T. dijon mustard

1 T poppy seeds

2 tsp. dried minced onion 

2 tsp. Worcestershire sauce

1/4 tsp. salt

1/4 tsp. pepper

Preheat oven to 350 degrees. Line a 9×13 pan with aluminum foil, spray with cooking spray

Place the bottom “slab” of rolls in the prepared pan. 

Evenly layer about half the ham over the rolls

Evenly layer the cheese. 

Evenly layer the remaining ham. 

Add the top “slab” of rolls. 

In the bowl with the melted butter, add the mustard, poppy seeds, onion, Worcestershire sauce, salt pepper, and whisk to combine. 

Evenly and slowly pour the butter mixture over the rolls. Use a spatula to spread the mixture over the tops. 

Cover with aluminum foil and allow rolls to stand at room temp for about 5-10 mins.

Bake covered for about 20 minutes or until cheese has melted. 

Uncover and cook for about 3-5 minutes. Make sure they don’t burn. Slice into individual sliders and serve immediately. They are best when warm and fresh!

This next recipe is a dessert. It's red, so it's perfect for having at Christmas! These are rich, but they are oh so good! 

Red Velvet Gooey Butter Cake Bars

1 box Red Velvet Cake mix

3 eggs, divided

1 c. unsalted butter, divided into 2 sticks and melted

8 oz. cream cheese, softened

1 tsp. vanilla

16 oz. confectioner’s sugar, plus a little more to sift over the top

Preheat oven to 350 degrees. Spray a 9×13 pan with cooking spray. In a large bowl, beat cake mix, 1 egg, and 1 stick of melted butter at medium speed just until combined. Press mixture into prepared pan. 

In the same bowl, beat cream cheese at medium speed until smooth. Beat in vanilla and remained 2 eggs. 

Add Confectioner’s sugar and beat at low speed until well combined. 

Slowly add remaining stick of melted butter, beating until combined. Pour mixture over prepared crust in pan. 

Bake until center is just set, about 30 minutes.

Cool completely in pan. 

Sift some confectioner’s sugar over the top.
