I cooked it for the first time Monday night, and it was very tasty and satisfying.\u00a0<\/p><p>I adapted it from <a href=\"https:\/\/www.healthyseasonalrecipes.com\/healthy-chicken-piccata\/\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #33cccc;\"><strong>this<\/strong><\/span><\/a> recipe.\u00a0<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-4cd0636 elementor-widget elementor-widget-text-editor\" data-id=\"4cd0636\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<h3>INGREDIENTS:<\/h3>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-bacabd2 elementor-widget elementor-widget-text-editor\" data-id=\"bacabd2\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<ul><li><span data-amount=\"1\">1<\/span>\u00a0lemon<\/li><li><span data-amount=\"1\">1<\/span>\u00a0pound boneless skinless chicken breasts<\/li><li><span data-amount=\"0.25\" data-unit=\"cup\">\u00bc cup<\/span>\u00a0all-purpose flour (I used whole wheat flour)<\/li><li><span data-amount=\"0.5\" data-unit=\"teaspoon\">\u00bd teaspoon<\/span>\u00a0salt<\/li><li><span data-amount=\"0.5\" data-unit=\"teaspoon\">\u00bd teaspoon<\/span>\u00a0ground pepper<\/li><li><span data-amount=\"1\" data-unit=\"tablespoon\">1 tablespoon<\/span>\u00a0plus 4 teaspoons extra-virgin olive oil, divided<\/li><li><span data-amount=\"1\">1<\/span>\u00a0large sweet onion, sliced<\/li><li><span data-amount=\"1\">1<\/span>\u00a0clove garlic, minced<\/li><li><span data-amount=\"1\" data-unit=\"cup\">1 cup<\/span>\u00a0reduced sodium chicken broth<\/li><li><span data-amount=\"0.25\" data-unit=\"cup\">\u00bc cup<\/span>\u00a0dry white wine (I did not use wine, I just used extra chicken broth)<\/li><li><span data-amount=\"4\" data-unit=\"teaspoon\">4 teaspoons<\/span>\u00a0drained capers<\/li><li><span data-amount=\"0.25\" data-unit=\"cup\">\u00bc cup<\/span>\u00a0chopped parsley<\/li><\/ul>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-071cbb6 elementor-widget elementor-widget-text-editor\" data-id=\"071cbb6\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<h3>INSTRUCTIONS:<\/h3><div><br><\/div>\n<ol>\n<li id=\"instruction-step-1\"><strong>Prepare Lemon and Chicken:<\/strong>&nbsp;Cut lemon in half. Juice half of it, and cut the remaining half into thin slices. Cut chicken breasts into 8 thin cutlets.<\/li>\n<li id=\"instruction-step-2\"><strong>Dredge Chicken:<\/strong>&nbsp;Whisk flour, salt and pepper in shallow dish or pie plate. Dredge chicken in the flour mixture, turning to coat. Discard 2 teaspoons dredging flour and reserve the rest to thicken the sauce in step 5.<\/li>\n<li id=\"instruction-step-3\"><strong>Brown Chicken:<\/strong>&nbsp;Heat 2 teaspoons oil in a large non-stick skillet over medium-high heat. Add half the chicken and cook until the bottom is browned, 2 to 4 minutes. Turn over and continue cooking until browned on the bottom, 2 to 3 minutes. Set aside on a plate. Repeat with 2 teaspoons oil and the remaining 4 pieces of dredged chicken, adjusting the heat to medium-low to prevent the chicken from burning. Transfer the second batch of chicken to the plate.<\/li>\n<li id=\"instruction-step-4\"><strong>Cook Onions and Garlic:<\/strong>&nbsp;Wipe out skillet with a clean paper towel. Add the remaining 1 tablespoon oil and place the skillet over medium-high heat. Add onion, and cook, stirring often until soft and browned, 5 to 7 minutes. Add garlic, and cook, stirring constantly until the garlic is fragrant and just starting to brown, 30 to 90 seconds.<\/li>\n<li id=\"instruction-step-5\"><strong>Make Sauce:<\/strong>&nbsp;Sprinkle the remaining dredging flour over the onion mixture and stir to coat. Stir in broth, white wine, capers, the lemon slices and the lemon juice, increase heat to high and bring to a simmer, stirring constantly.<\/li>\n<li id=\"instruction-step-6\"><strong>Finish Dish:<\/strong>&nbsp;Add the chicken and any accumulated juices from the plate to the skillet and turn to coat in the sauce. Bring to a simmer while turning the chicken in the sauce until the sauce is thickened, and the chicken is completely cooked through and hot, 3 to 4 minutes.
