Today, I’m sharing a favorite recipe around here. I’m very picky with my Macaroni and Cheese. I want it to be very creamy. I get really upset when I bake my macaroni, and it doesn’t turn out creamy and cheesy. Ingredients\u00a0<\/strong><\/p>

  • 1<\/span>\u00a0lb.<\/span>\u00a0dried elbow pasta<\/span><\/li>
  • 1\/2<\/span>\u00a0cup<\/span>\u00a0unsalted butter<\/span><\/li>
  • 1\/2<\/span>\u00a0cup<\/span>\u00a0all purpose flour<\/span><\/li>
  • 1 1\/2<\/span>\u00a0cups<\/span>\u00a0whole milk<\/span><\/li>
  • 2 1\/2<\/span>\u00a0cups<\/span>\u00a0half and half<\/span><\/li>
  • 4<\/span>\u00a0cups<\/span>\u00a0grated medium sharp cheddar cheese<\/span>\u00a0–\u00a0divided (measured after grating)<\/span><\/li>
  • 2<\/span>\u00a0cups<\/span>\u00a0grated Gruyere cheese<\/span>\u00a0–\u00a0divided (measured after grating)<\/span><\/li>
  • 1\/2<\/span>\u00a0Tbsp.<\/span>\u00a0salt<\/span><\/li>
  • 1\/2<\/span>\u00a0tsp.<\/span>\u00a0black pepper<\/span><\/li>
  • 1\/4<\/span>\u00a0tsp.<\/span>\u00a0paprika<\/span><\/li><\/ul>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t

    Instructions<\/strong><\/p>

    • Preheat oven to 325 degrees F and grease a 3 qt baking dish (9×13″). \u00a0Set aside.<\/div><\/li>
    • Bring a large pot of salted water to a boil. \u00a0When boiling, add dried pasta and cook 1 minute less than the package directs for al dente. \u00a0Drain and drizzle with a little bit of olive oil to keep from sticking.<\/div><\/li>
    • While water is coming up to a boil, grate cheeses and toss together to mix, then divide into three piles. \u00a0Approximately 3 cups for the sauce, 1 1\/2 cups for the inner layer, and 1 1\/2 cups for the topping.<\/div><\/li>
    • Melt butter in a large saucepan over MED heat. \u00a0Sprinkle in flour and whisk to combine. \u00a0Mixture will look like very wet sand. \u00a0Cook for approximately 1 minute, whisking often. \u00a0Slowly pour in about 2 cups or so of the milk\/half and half, while whisking constantly, until smooth. \u00a0Slowly pour in the remaining milk\/half and half, while whisking constantly, until combined and smooth.<\/div><\/li>
    • Continue to heat over MED heat, whisking very often, until thickened to a very thick consistency. \u00a0It should almost be the consistency of a semi thinned out condensed soup.<\/div><\/li>
    • Remove from the heat and stir in spices and 1 1\/2 cups of the cheeses, stirring to melt and combine. \u00a0Stir in another 1 1\/2 cups of cheese, and stir until completely melted and smooth.<\/div><\/li>
    • In a large mixing bowl, combine drained pasta with cheese sauce, stirring to combine fully. \u00a0Pour half of the pasta mixture into the prepared baking dish. \u00a0Top with 1 1\/2 cups of grated cheeses, then top that with the remaining pasta mixture.<\/div><\/li>
    • Sprinkle the top with the last 1 1\/2 cups of cheese and bake for 15 minutes, until cheesy is bubbly and lightly golden brown. \u00a0<\/div><\/li><\/ul>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t

      You can use other varieties of cheese if you wish. I just chose to use Gruyere. \ud83d\ude42<\/p>

      You can also make this a day or two ahead and just keep it refrigerated. Add a little more milk, so it stays creamy and set out about 30 minutes before you bake it.\u00a0<\/p>
