**Let’s Look At….. What I Eat in a Week** {2.9.2022}
Happy Wednesday Everybody! I’ve got a fun little link-up post for you. I’m linking up with Shay from MixandMatchMama and Erika from ALittleBitofEverything and talking about what I/we eat in a week.
So, since starting Noom and Joey doing Keto, our menu looks a little different from week’s past.
This is a typical breakfast for me. Addison and I eat breakfast around 6:00 and leave to head to school around 6:15. So, 2 eggs, 1 slice of Canadian Bacon, Strawberries/Raspberries, and Coffee with 2 teaspoons of Half/Half, and 1 teaspoon of stevia.
Some days, I will make oatmeal and put stevia in it to sweeten.
Most Sunday afternoons are spent meal prepping for lunch, for the week.
Here’s all my chicken to grill and salads to divide into containers for the week.
I usually eat salad with grilled chicken 2-3 times a week for lunch.
Other days, I will make myself a half whole wheat sandwich with chicken or turkey lunch meat and some kind of fruit (grapes, apple, strawberries) then a Oikos Triple Zero Yogurt.
I have also taken a broth type soup for lunch.
Dinner is a little trickier to try to find something we can both be happy with.
One night this week, I cooked baked fish, broccoli, and baked potatoes.
We do a lot of grilled/baked fish and grilled chicken with broccoli or brussels sprouts. Not very exciting.
One night, I made spaghetti with whole wheat pasta and had a salad.
I made chicken enchiladas last night with cauliflower Mexi rice
We usually go out to eat dinner once or twice a week.
If I’m in a lull, I will look on skinnytaste.com for recipe ideas.
I also LOVE to cook in my slowcooker. This slowcooker has been the best investment! I use it at least once a week, and it never lets me down.

So, the best keto meal I make is requested even when no one is practicing that diet around here. Just had it last night in fact!
1 lb ground beef – brown with onion and drain.
Add 3 T taco seasoning, small can sliced back olives, a can of diced tomatoes with green chilis, and 16 oz shredded cabbage. That is it! I let the cabbage soften a bit, then serve with shredded cheese, sour cream and sliced avocado (iridologist guacamole). Truly a favorite around here and leftovers are great too.
