**What we are Eating** {5.20.2020}

Happy Wednesday!! We’ve had a good week so far. I’ve just been wrapping up the school year, posting grades and finalizing the schedule and everything for next year. Today, I’m sharing what we have been eating this week. Maybe you’ll get some inspiration. 

Sunday: Grilled chicken thighs, broccoli cheese casserole, creamed corn, crowder peas

Monday: Pioneer Woman’s Baked Ziti , Strawberry Spring Salad (Recipe below) 

I use this meat chopper, and it’s my favorite thing to use when I’m cooking ground beef. I’ve had mine for a few years, and it’s still in great condition! Highly recommend it!

Then, I made the Strawberry Spring Salad with it. Super easy! And perfect for this time of year! 

2 cups fresh strawberries, quartered

1 bag mixed salad greens

1 cup glazed nut and fruit trail mix

1/4 cup champagne salad dressing

1/2 cup crumbled feta (or goat) cheese

 

  1. Cut strawberries into quarters. Add to salad bowl: strawberries, salad greens, and trail mix. 
  2. Toss with dressing and sprinkle with cheese. Serve

Tuesday: Trader Joe’s orange chicken, fried rice, stir fry veggies

Wednesday: Chicken fried chicken, mashed potatoes, green beans

Thursday: Leftover Ziti

Friday: Leftover Orange Chicken

I made this pound cake a few weeks ago. It was very good and didn’t last long around here.
