**You don’t have Muffin on Me** {8.18.2021}

Today, I’m sharing a couple of muffin recipes. These both are great for grab and go breakfasts. 

I am sharing Zucchini Muffin and my Sausage Muffin recipe. 

Zucchini Muffins

3 eggs 

2 c. sugar

1 c. vegetable oil

2 c. grated zucchini

2 c. All-Purpose Flour

1 tsp. salt

1 tsp. cinnamon

1 tsp. baking soda

1/4 tsp. baking powder

1 tsp. vanilla flavoring

(Can add pecans, but I never do)

 

Mix all together. Bake at 350 degrees for 20-25 minutes. Makes about 15 muffins.

I’ve also made this in a loaf pan, and it still had some leftover for a few muffins. If you’re making it in a loaf pan, cook for 1 hour.
