*Wednesday Check-In** {2.5.2020}
Happy Wednesday!! How is everyone doing? I don’t know about you guys, but I’m already feeling better about myself since moving on to a new month. January was long.
Today’s post is short and sweet because we have a lot going on this week. Monday night, we had dance. Last night, we had data night at school until 8. With that said, it’s been difficult keeping things running on the home front. Thankfully, Joey was available and able to keep our house going.

Here’s what we are eating this week! A couple of recipes are below.
Sunday: Baked Trout, Broccoli/Rice Casserole, Peas, Carrots, and Praline Cheesecake for dessert 😉
Monday: I had prepped a Hamburger casserole (recipe below) to cook on Sunday, so Joey cooked it for me while we were gone to dance, I had cooked peas/snaps in the crock pot all day, air fryer zucchini chips
Tuesday: Pork Loin, Risotto, Okra
Wednesday: Leftover Hamburger Casserole
Thursday: Leftover Pork Loin
Friday: Haven’t decided yet… any suggestions?
Saturday: Addison and I are going to stay with our besties this night, so we will be eating with them. Joey will probably grab something
Hamburger Noodle Casserole:
12 oz. package egg noodles
1 1/2 lb. ground beef
2 boxes cream of mushroom soup ( I buy the organic kind in boxes)
2 cans diced petite tomatoes
2 cups shredded cheese
parmesan cheese
Preheat oven to 350 degrees. Brown the ground beef until no pink, drain. While cooking ground beef, boil the noodles until al dente’, drain.
In a bowl, mix soup and tomatoes. Add in drained beef, stir. Toss noodles in and mix. Add to a grease 9×13 dish or separate into 2- 8×10 dish. Top with shredded cheese. Bake for 30-40 minutes until bubbly. Sprinkle Parmesan cheese to the top, if you’d like.
I made us some sausage/egg muffins for breakfast for the week. They are easy to just grab and heat up when I’m in a hurry in the morning, and they’re healthy with low carbs. #score
1 lb. sausage
10 eggs
2 cups of shredded cheese
1/4 c. milk
Any veggies you’d like to add like mushrooms, onions, peppers, etc…
Preheat oven to 350 degrees. Grease a 12 cup muffin pan (I used olive oil spray). Brown sausage until no pink, drain. Crack the eggs in a bowl and beat together. Add in cooked sausage, milk, cheese, and any other veggies. Mix together.
Add about 1/2 to 3/4 cup in each muffin hole. Bake for about 20-25 minutes, until brown.
Makes about 12 muffins. #perfectbreakfast
The last thing for today, I’d like to leave with you. Often, we all are so busy, we don’t take the time to check on ourselves and others. We need to check on our own well-being and take care of us.
I always enjoy a night out with friends or just calling a friend. Take time to get a mani/pedi, get a massage. Read a good book to just relax your brain, take a bath. Just do something to take care of yourself. You deserve it!
