Happy Friday, friends! Today is going to be a great day! It’s the last day of school before our week long break! On Monday, I had to go pick up things for a Valentine’s day treat for our staff on Tuesday. My cart was pretty packed. On the way back to school, I picked up some lunch for me and a few school mates. **Low Carb Chicken Mushroom Soup** {2.15.2023}
Hey guys! How are you today on this day after Valentine’s day? I made this low carb Chicken Mushroom soup a few weeks back, and it was delicious! So flavorful! Even Joey commented how delicious it was. It is packed with mushrooms, and I ended up only using two types, but I really didn’t mind them. I started by seasoning the cut up chicken with salt and pepper. Saute the chicken in a large Dutch oven over medium-high heat in some olive oil, then remove it from the pan with a slotted spoon. -Add mushrooms to the pot, stir, and sauté for 6 minutes. Happy Monday Everybody!! I am so thankful we finally had a weekend where we were all well! Today, I’m linking up with Holly and Sarah for Hello Monday and sharing a recap of our weekend. Friday evening, Addison had her first basketball tournament game. We headed to eat Mexican before the game. They already had it decorated for Valentine’s Day. 🙂 The girls played hard and have learned so much this season! We ended up losing, but we were all so proud of their progress. Well, our weekend went a little differently than planned, but that’s alright Everyone needs to rest every now and then. So, off I went to get her. I ended up going ahead and taking her to Children’s Urgent care in hopes that they could give her something to kick it out fast.
