**What’s up Wednesday** {7.28.2021}
It’s the last Wednesday of the month. I’m linking up with Mix and Match Mama and Sheaffer. I am sharing everything that’s been going on with us lately. Can you believe July is over? Where did Summer go? I’m back in school, and in just a few short weeks summer will seem like a sweet memory.
1. What We Are Eating This Week:
This week, I was just grabbing random things to cook. Nothing fancy around here.
Sunday: Grilling Hamburgers, French Fries
Monday: Chicken & Rice Casserole, Fried Squash, Green Beans
Tuesday: Beef Taco Quesadillas (Picture & Recipe Below)
Wednesday: BBQ chicken, Mac N’ Cheese, Creamed Spinach
Thursday: Leftover Casserole
Friday: Leftover BBQ
Saturday: Kitchen’s closed!
Beef Taco Quesadillas (From Pioneer Woman)
1 1/2 lbs. ground beef
2 heaping T Chili powder
1 tsp. ground cumin
1/2 tsp cayenne pepper
3 T tomato paste
3/4 tsp. kosher salt
1 cup water
Butter for frying
8 corn tortillas
12 oz. Monterrey Jack cheese, grated
Toppings of your choice
1. In a large skillet over med-high heat, brown the ground beef. Drain the excess fat.
2. Add the chili powder, cumin, cayenne, tomato paste, salt, and 1 cup water. Then stir to combine.
3. Simmer for a few mins for the flavors to blend.
4. Heat a separate skillet over medium heat and smear butter on the pan. Place tortilla in the skillet.
5. Top it with a generous amount of the cheese.
6. Cover the surface with beef.
7. Sprinkle on a little more of the cheese.
8. Then place another tortilla on top. The edges of the bottom tortilla should be sizzling, so flip the quesadilla over with a spatula.
9. Let the second side cook until the cheese is melted and the edges are sizzling.
10. Remove the quesadilla from the pan and repeat with the remaining tortillas.
11. Add toppings of your choice.
2. What I’m Reminiscing About:
I am loving looking back at all my summer memories.
This memory is a real throw-back. It’s from 11 years ago when about 15 of us all went to Tybee Island. What a crazy fun trip. #tybeetimes
This was 7 years ago… on a family vacation. Oh, to be that tan again.
This memory popped up from 6 years ago. That was such a fun girls trip!

And my goodness, just looking at this sweet picture of Addison from last summer makes me want to bawl my eyes out. Just in a year, she has grown so much! Next summer, she will be almost 6…..The years do fly by.
3. What I’m Loving:
I just ordered a new Erin Condren planner for the new year. It’s on the way, and I can’t wait to get it and start filling it up with my notes/meetings. #thelittlethings #flairpens #nerdalert
4. What We’ve Been Up To:
Thankfully, it finally stopped raining. So, we’ve been enjoying lots of days in the pool.
I’m dreading getting back to the hustle and bustle. I’m going to miss my slow, easy days and mornings.
6. What I’m Working On:
I’m working on preparing for the school year. I can’t wait to fist-bump/hug on my sweet students.
7. What I’m Excited About:
I am excited that we are semi getting back to normal around here. We are able to go inside Addison’s school this year, and I’m very excited about it!
I’m also excited about snagging my favorite Coola Sunscreen pack from the Nordstrom Sale.
8. What I’m Watching/Reading:
Well, I watched Season 3 of Virgin River. It wasn’t my favorite.
I’m not really watching anything else right now, because I’m spending lots of time reading. I’ve been reading some awesome books lately.
Elin Hiderbrand is probably my favorite author. I’m very loyal to her, and will probably read all of her books. That being said, this was not one of my favorites. I really liked parts of it, but the biggest part was the main character was a spirit, so that was a little off for me. Anyway, if you’re a loyal fan like me, give it a read.
Last year, I read Elin’s 28 Summers. It was great, but it was a little sad. I was super thrilled when I heard there was going to be a little add-on. I read “The Sixth Wedding” earlier this month, and it really helped to close out that story for me.
I am currently reading “The Unhoneymooners” and am flying through it! I love the quick wit and the Rom-Com antics. If you’re looking for a really light read, definitely add this to your list. I literally laughed out loud many times while reading it.
Olive Torres is used to being the unlucky twin: from inexplicable mishaps to a recent layoff, her life seems to be almost comically jinxed. By contrast, her sister Ami is an eternal champion…she even managed to finance her entire wedding by winning a slew of contests. Unfortunately for Olive, the only thing worse than constant bad luck is having to spend the wedding day with the best man (and her nemesis), Ethan Thomas.
Olive braces herself for wedding hell, determined to put on a brave face, but when the entire wedding party gets food poisoning, the only people who aren’t affected are Olive and Ethan. Suddenly there’s a free honeymoon up for grabs, and Olive will be damned if Ethan gets to enjoy paradise solo.
Agreeing to a temporary truce, the pair head for Maui. After all, ten days of bliss is worth having to assume the role of loving newlyweds, right? But the weird thing is…Olive doesn’t mind playing pretend. In fact, the more she pretends to be the luckiest woman alive, the more it feels like she might be.
9. What I’m Listening To:
I have loved listening to some podcasts lately.
I love listening to “The Bestie Breakdown”. My favorite episodes have been Breaking Down Binge Watching and Friendships. But, my favorite episode thus far has been when Tab and Andrew took over and chatted about Breaking Down the Besties. It was hilarious! I laughed out loud so many times!
I also have enjoyed listening to “The Southern Tea”. They’re 2 southern women that talk about all kinds of things from motherhood, to organization to reality shows. I’ve enjoyed it.
10. What I’m Wearing:
I’m still loving my Hey Dudes. I wore them to school this week, and I can already tell they’re going to be a favorite.
I can’t wait to wait to wear This Free People Henley this Fall. It will be really cute with some colored skinny jeans and booties.
I grabbed this Madewell sweater in Autumn Gold from the Nordstrom Anniversary sale. My exact color is sold out, but it’s still available in Olive, Navy, and Grey. Some of the sizes are limited. I love the fit and the detailing along my side.
I also snagged this Madewell sweater during the sale. I love the Rose colored stripes. I have it on with the Wit & Wisdom Itty Bitty Boot Cut Jeans that were also part of the sale. Mine are in the dark wash. Fingers crossed they both are restocked. 😉

11. What I’m Doing This Weekend:
Addison has soccer on Saturday, and then I’m sure we will be getting ready for the first day of school. Maybe we can go do something to have a last hoorah.
12. What I’m Looking Forward to Next Month:
It’s not really going to be happening next month, but I’m looking forward to the weather transitioning to Fall. I feel like once school starts, I need to get out the pumpkins and apples.
13. What Else is New:
I love these labels to use on Addison’s clothes and things for school. They’re so easy and washable.

I was disappointed in Elin’s latest book too but LOVED the Unhoneymooners; it was SO funny! Your quesadillas look delicious.

I’m catching up on my WUW reading just in time for a new link up next week! I hope the last of your summer went well and that the start of school has been okay. I loved The Unhoneymooners. It was one of the better Christina Lauren books in my opinion. I will have to check out the Elin Hildebrand 28 Summer sequel because I really liked 28 Summers.
