    Happy Happy Monday! We are extra happy because after today, we only have 2 more Mondays left in the school year.     Today, I’m sharing a couple, very easy, and healthy lunch ideas. At this point of the year, we are always needing quick and easy, so these were great.  I bought these Quest Nacho Cheese Protein Chips. I put some shredded Costco Rotiserrie Chicken on top and then drizzled some Queso. You could also add some more veggies. I just didn’t. I did add some salsa. And voila, so easy, filling, and delicious!    Another easy lunch idea were these mini pizzas. I used Carb Balance Mission fajita size tortillas.     Hello, Monday!! So sad the weekend is over. We are definitely in the busy part of the year, the end of school is near.  Like the norm, I’m linking up with Holly and Sarah for Hello Monday and sharing a recap of our weekend. Friday, I dropped Addison off for a sleepover at Adalynn’s, and I headed to the grocery store.  Once I got home, I didn’t move from this position.  Meanwhile, Addison was having the best time celebrating Adalynn on her birthday.  We had to pickup Addison early Saturday morning, and we were off to soccer.  Despite getting not a lot of sleep the night before, Addison played hard and won the medal…
