**Marie’s Meatballs** {9.2.2020}

This recipe was passed down to me from a family friend. She lives in the town where my Dad grew up. It’s a very small, rural town, in Tennessee. These are a scrumptious, nighttime meal, if you want some home cooking. Definitely comfort food. I want to preface that they are not Italian meatballs. They are very similar to meatloaf balls. 🙂 

So here you go!! 

  • 2 lbs. ground beef
  • 1 cup cornflakes ( I buy the ones in the cup already ground up) 
  • 1/2 cup applesauce
  • salt 
  • pepper
  •  medium onion, chopped
  • Green Pepper (optional, so I leave out)
  • 1/2 cup ketchup
  • 1/2 cup water

Preheat oven to 350 degrees. Spray 9 x 13 casserole dish. Mix first 5 ingredients together. Sprinkle Onion/Peppers on bottom of dish. Roll meat mixture into balls and place on top of onion/peppers. Mix ketchup and water, in a bowl. Pour over the meatballs. Loosely cover with aluminum foil. Bake on 350 for 1 hour. Not pretty, but so easy. 

That was it! I served it with wild rice, green beans, and fried okra. Dig in! This would be perfect for a nighttime Fall meal. So cozy. 🙂
