I always like to make different Christmas cookies for mine and Joey’s work colleagues/friends. This past weekend, I did that. All day…. It always wears me out, but I do love it! And this year, Addison helped me, which made it even more fun.
I’m going to share 3 easy Christmas goodie recipes that you could should do. 😉
The first one I’m sharing is super easy. It’s got a little salty and a little sweet.
White Chocolate Covered Ritz Crackers
– Ritz crackers (I like to get the Snowflake festive ones. They were a little hard to find this year because 2020.)
– Creamy Peanut Butter
– Vanilla flavored Almond Bark
– Sprinkles
Spread a little bit of peanut butter on one cracker. Put other cracker on top. Continue until you have all the crackers you want. Melt bark in a bowl. I like that my microwave has a melt chocolate feature. Dip crackers in the melted almond bark and sprinkle with sprinkles. Easy as that and always a crowd favorite! My four year old helped me with this one and loved it!
Another thing I made were Oreo Truffle Balls. These are also really easy. You need…
1 container of Oreo Cookies
1 8 oz. softened cream cheese
Chocolate Bark
Crunch up oreo cookies. I like to put them in a gallon bag and just smash them, it keeps it not as messy. Pour the cookie crumbs into a bowl. Mix cookie crumbs and softened cream cheese with a hand mixer. Place in refrigerator to chill for a couple hours.
Melt chocolate in a bowl. Use a small cookie scoop to ball up cookie mixture. Dip in the melted chocolate. Place on waxed paper to allow to harden.
Can you tell who helped with the sprinkles. 😉
Hot Chocolate Cookies
Ingredients
1 cup butter softened
1 cup sugar
2/3 cup brown sugar
2 eggs
1 teaspoon vanilla
3 1/4 cups flour
4 packages or 3/4 cups hot cocoa mix – NOT SUGAR FREE VERSIONS
1 teaspoon salt
1 teaspoon baking soda
2 teaspoon baking powder
1 cup chocolate chips
1 cup Mallow Bits or Freeze Dried Marshmallows mini marshmallows do not work the same and can be a bit of a sticky mess
Instructions
Beat butter and sugars in large bowl with standing mixer until light and fluffy, approximately 2-3 minutes. Add eggs and vanilla; mix well.
In a separate bowl combine dry ingredients. Gradually mix dry ingredients into butter mixture until well blended, but do not over mix. Stir in chocolate chips and Mallow Bits*. Cover and chill for at least 30 minutes, up to 2 hours.
When ready to bake, preheat oven to 350 degrees. Drop 2 tablespoons dough, 2 inches apart, onto baking sheets lined with silicone baking mats or parchment paper. Bake 9 to 11 minutes or until edges are lightly browned. Cool on baking sheets 5 minutes; remove to wire racks and cool
I couldn’t find Mallow bits, I went to 5 stores looking because 2020, but making the cookies without them was fine. Not as cute, but fine. 🙂 #everythingisfine
