**What’s up Wednesday** {1.27.2021}

It’s the last Wednesday of the month. Today, I’m linking up with Mix and Match Mama and Sheaffer. I am sharing a little bit of everything that’s been going on with us lately. Can you believe a month in 2021 is almost over? Crazy!! I feel like this month flew by when usually January feels about 3 months long.

1. What We Are Eating This Week:

Sunday: Chicken Alfredo, Lima beans, Butternut squash, Old fashioned Chocolate Fudge Pie (Recipe below) 

Monday: Chicken and Dumplings

Tuesday: BBQ chicken, parmesan baked potatoes, baked beans

Wednesday: Shrimp Scampi

Thursday: Leftover BBQ chicken

Friday: Leftover Shrimp

Saturday: Kitchen’s Closed 

Old Fashioned Chocolate Fudge Pie

1 small can Evaporated milk

1 1/2 c. sugar

3 1/2 T cocoa powder

1/2 stick melted butter

2 eggs, beaten

1 T vanilla

 

Mix above ingredients together and pour in unbaked pie shell. Bake on 350 degrees for approximately 40 minutes. 

2. What I’m Reminiscing About: 

This memory popped up from 3 years ago when we had a girl’s night out to see Miranda Lambert… she’s one of my favorites.. side note, I actually met her many years ago. It was a memory I will never forget. 

Here we are… Hard to believe that was 10 years ago. 

Look at these sweet memories that popped up from 2018. Sweet pigtails. 

3. What I’m Loving:

We are still loving our Nordstrom blanket. It’s so soft and cozy, and we all fight over it. I guess we need to buy one for each of us. 

My germaphobic self is still loving this phone sanitizer. It gives me a little more peace of mind for cleanliness. The phone is one of the dirtiest objects we touch all day. And it touches our face and everything. Yuck! 

4. What We’ve Been Up To:

We have been playing and building all the things. 

We have been enjoying cool/cold days with hot chocolate. (Whipped Cream and Marshmallows added of course) 🙂

We also celebrated our favorite guy’s birthday this month. We made him a coconut cake, and I had the best helper. 

We celebrated the 100th day with this little old lady this week. 😉 

5. What I’m Dreading:

The only thing I’m dreading is the thought of us going back to teaching virtually. We did it the past two weeks, and although my students did amazing, it’s just not the same as teaching in person.  

 

6. What I’m Working On: 

I’m working on some shopping for Valentine’s Day for Addison’s class, my students and family. We have to make Addison a box for her class and decorate it. We are thinking a unicorn because what else would she pick. Ha! I’m looking at some of these down below… 

I’m trying to decide what kind of treats I want her to do. Last year, I ordered this cotton candy for my students and these cute, rainbow erasers from Amazon. Then, I just slid them into clear gift bags and stapled an adorable card on top. I am not sure if I will do this again or something new.

I’m also excited working on beginning to lay out our clothes and things in preparation for our Disney trip next month. 

7. What I’m Excited About: 

I am really excited about our break coming up in February. 

I am also really excited about doing all kinds of Valentine things for Addison. We still love these books:  The Day it Rained Hearts and Bagel in Love. She has loved reading them. I did this last year, and I loved it so much I wanted to continue the tradition again this year. I have some heart cut-outs in pink, purple, and red. I plan to write little words/phrases on the hearts and put them on her door every day beginning February 1st sharing little things about her that we love, or how she shows kindness, etc… 

This Rae Dunn mug and felt ball garland make me excited. I love any sort of holiday decoration. I’m down for it. These things give me all the happy feels. 

8. What I’m Watching/Reading:

I started watching Matt’s season of the Bachelor, and ya’ll he’s precious. He’s so genuine and he prayed on the first episode. He just seems like a true gem, and I hope he ends up with a nice, truly sweet girl. Some of them, I feel like, shouldn’t even be there. Here’s looking at you Queen Victoria. 

I just finished watching Southern Charm, and it of course did not disappoint. I live for the drama, but I do feel sorry for some of the girls and guys when there is such catty, truly mean, behavior. It doesn’t reflect our true southern demeanor. #noma’am 

Joey and I are still watching “The Crown”. However, we just started season 3, and all the character changes really affected our interest. We have just felt like it’s not as good. Tell me it gets better. 

I recently finished Nicholas Sparks new book, “The Return“. In similar Sparks fashion, there is a military guy that returns to a childhood town.  In the town, there are two ladies that intertwine throughout the story and of course bring complications. I would recommend it.  

My current read is “This is not how it Ends“. The main character, Charlotte, meets Philip, and they quickly fall for each other. It flips back and forth from back in time to present time, but I’m enjoying it so far. 

9. What I’m Listening To: 

I have been listening to a lot of Pandora lately. I’m loving the classical music station lately. 

10. What I’m Wearing: 

These Valentine long-sleeved tees would be perfect to wear for Valentine’s day and days leading up to it. They would be perfect for a teacher to wear! They’re cute without being in your face. My favorite designs are the 2 Red and the Red 1. 

This sweatshirt from Target has been all over the internet and blogger sites. I tried to grab one yesterday while I was at Target, but no such luck. They were sold out. I guess I will just keep looking. 

These joggers from Amazon are ColorfulKoala brand. And, I love them. Sometimes when I get home from school, I change out of my pants and into them. They’re that good.

I am eyeing this crewneck sweater from Amazon. I especially like this coral color or the aqua color. 

I think this sweater from Amazon is so cute! I love the color scheme, and, bonus, it comes in lots of other colors. 

11. What I’m Doing This Weekend: 

We don’t have a lot going on this weekend. I am hoping the weather is nice, and we can get some outside time. We will probably be packing some too. 

But I know I will definitely be doing the usual: laundry and cleaning. It never ends. 

12. What I’m Looking Forward to Next Month:

I’m looking forward to doing all the Valentine’s activities/crafts. 

I’m also looking forward to this…. Eeek! It’s getting so close. 

13. What Else is New:

I can’t think of anything right now.
