**You don’t have Muffin on Me** {8.18.2021} August 18, 2021 / 4 Comments Today, I’m sharing a couple of muffin recipes. These both are great for grab and go breakfasts. I am sharing Zucchini Muffin and my Sausage Muffin recipe. Zucchini Muffins 3 eggs 2 c. sugar1 c. vegetable oil2 c. grated zucchini2 c. All-Purpose Flour1 tsp. salt1 tsp. cinnamon1 tsp. baking soda1/4 tsp. baking powder1 tsp. vanilla flavoring(Can add pecans, but I never do) Mix all together. Bake at 350 degrees for 20-25 minutes. Makes about 15 muffins.I’ve also made this in a loaf pan, and it still had some leftover for a few muffins. If you’re making it in a loaf pan, cook for 1 hour.
