**Christmas Cookies & Other Recipes** {12.22.2021}

Happy Wednesday! How’s everyone doing today? 

Are you all done shopping? Done wrapping? Hopefully you are and can “rest”. 😉 

Today, I’m sharing some recipes that we are having at different get togethers this week and also sharing our Santa Cookie recipe. 

First up is my Buffalo Chicken Dip

It’s easy, and it’s always a huge hit. 

Ingredients

3-4 chicken breasts (cooked and shredded)

1/2 to 1 cup of Ranch Dressing

1/4 cup Frank’s Buffalo Wing Sauce

1 8 oz. package Cream Cheese (softened) 

1 cup shredded cheddar cheese

Instructions

Preheat oven to 350 degrees.

Mix first 4 ingredients together. Add to a 9×13 casserole dish. Bake for 15 minutes. Sprinkle on cheese and cook another 20-30 minutes. It will be bubbly. Serve with tortilla chips or whatever makes you happy.

Momfessionals Captain Rodney’s Dip

 
Ingredients:
Ritz Crackers
1 cup shredded cheddar
1/2 cup mayonnaise 
1 block cream cheese
8 slices of cooked bacon, crumbled
2 chopped green onions ( am omitting this)
1/2 cup (about 1/2 the bottle) of Rodney Glaze 
 
Instructions: 
Mix the Cream Cheese, Cheddar Cheese, Mayonnaise and 2 green onions (if used) together. 
Spread the mixture into a pie plate and top with crushed Ritz crackers. (A thin layer, not too thick.)
Bake at 350 degrees for about 15 minutes or until the edges start to bubble. Pull it out, top with bacon and drizzle the 1/2 cup of glaze on top. Put it back into the oven for about 10 more minutes and serve warm with crackers.

Cocktail Wieners 

These only have 3 ingredients, but yet, they’re always a hit. 

Ingredients

2 packages of Cocktail Links (I get the all Beef)

1 cup BBQ Sauce (I like Sweet Baby Ray’s)

1/2 cup Grape Jelly

 

Instructions:

Add everything to a small slow cooker. Cook on low for 6 hours. That’s it. So simple.

Hot Ham & Cheese Sliders

Ingredients

1 bag Hawaiian sweet rolls

1/2 lb. swiss cheese, sliced

1/2 lb. ham, sliced

5 Tablespoons melted butter

1 Tablespoon Dijon mustard

1/2 Tablespoon Poppy seeds (I’m going to try my Trader Joe’s Anything But the Bagel seasoning instead)

1/2 Tablespoon dried minced onion

2 teaspoon Worcestershire sauce


Instructions

Preheat the oven at 350 degrees. 

Melt the butter, mustard, poppy seeds, Worcestershire sauce, and dried minced onion in a bowl. Set aside while you assemble the sliders. 

Leave the rolls together and cup horizontally through the center to make a top and bottom. 

Place the bottom rolls in a 9×13 baking pan. 

Add half of the ham on the bottom, then half of the cheese, then do another layer of ham and then cheese. 

Place the Hawaiian roll top back on. Pour the butter mixture over the top. 

Place in the oven for 20 minutes until the cheese is melted. 

When they’re done, cut each roll individually. Serve warm.

Easy Sugar Cookies

Ingredients

1 cup sugar

1/2 cup butter flavored shortening

2 eggs 

2 teaspoons vanilla

pinch of sale

2 1/4 cup of All Purpose Flour

1 teaspoon baking powder

2 teaspoons milk

 

Instructions

Preheat oven to 375 degrees

Line cookie sheet with Parchment paper. Set aside. 

In a mixing bowl, beat together sugar and shortening. Add in each egg, followed by your vanilla and pinch of salt. Slowly beat in flour. Finally, beat in the baking powder and milk. 

Cover the mixing bowl and refrigerate for at least 30 minutes. 

Dust your counter space with a bit of flour (or powdered sugar) and place your dough on top. Using a rolling pin, roll out your dough. Take your cookie cutters and cut out your shapes before putting them on your prepared baking sheet. 

When you’re ready to bake, add to the oven and cook for 8-10 minutes or until lightly browned on the bottom. 

Remove and cool completely before icing. 

Buttercream Icing:

1/3 cup butter, softened

pinch of salt

3 cups powdered sugar

1/4 cup milk

1 1/2 teaspoons vanilla

food coloring, optional

sprinkles, optional

Beat the butter, salt, powdered sugar and milk together. Add in your vanilla and continue to beat together. At this point, you can divide your icing between smaller bowls and color them as you wish. Frost cooled cookies and decorate. 

If you use this icing, make sure to store the cookies in the refrigerator.
