**Southwest Chicken Rice Bowls** {5.4.2022}

Grilling season is here, and I made this delicious recipe the other day and foresee many more nights of making it this Summer! It was So GOOD!! Believe me, if you start making it, you will want it often! You will crave it! Trust Me! 

Happy Wednesday and Happy Grilling! 

Step 1 – Grill your chicken breasts and some corn (you can use frozen corn… but grilled is always the way to go in my opinion), slice the corn off the cob and slice/dice up the chicken.

Step 2 – While the chicken is cooking, cook 1 1/2 cups Basmati rice.  Follow the package directions. Remove it from the heat and let it sit for about 3 minutes, then fluff it with a fork.  
 
Step 3 – Chop up a bunch of cilantro until you have 1/2 cup.  Throw the 1/2 cup chopped cilantro into the rice with 2 tablespoons fresh lime juice and 1 teaspoon olive oil.
 
This is the chopper I use. 

Step 4 – Mix 1/2 cup mayonnaise with 4 Tablespoons of chopped cilantro, 3 teaspoons lime juice, 1/4 teaspoon garlic powder and 4 teaspoons of water.  Whisk it all together and then throw in some salt and pepper to taste.  I know it sounds weird but it is SOOO Delicious!!!  

Last step – make the bowl!!!  I put in a scoop or so of rice, grilled chicken, black beans (drained and rinsed), corn, and some cheese.  Top it off with the aioli and enjoy! You could always add cherry tomatoes and avocado too! 

Delicious!!
