    I love to make these muffins for a quick thing to grab for breakfast during the week, something to take on a vacation, or just something to make for a change. They are so good! When I take them to gatherings, they’re always such a hit! And they’re super easy which is the best part!  1 lb. sausage 1 c. Bisquick (I use the heart smart one but either is fine) 1 1/2 c. grated Cheddar Cheese 8 oz. cream cheese, softened 2/3 c. milk 2 eggs, slightly beaten Preheat oven to 325 degrees Cook sausage until brown.     Happy Wednesday!! We’ve had a good week so far. I’ve just been wrapping up the school year, posting grades and finalizing the schedule and everything for next year. Today, I’m sharing what we have been eating this week. Maybe you’ll get some inspiration.  Sunday: Grilled chicken thighs, broccoli cheese casserole, creamed corn, crowder peas Monday: Pioneer Woman’s Baked Ziti , Strawberry Spring Salad (Recipe below)  I use this meat chopper, and it’s my favorite thing to use when I’m cooking ground beef.     Happy Wednesday and Happy Hump Day!! It’s been a really busy week around here with lots of after school meetings and events going on.  Today is short and sweet.
