**Spring Break Vacation Recap** {4.20.2022}
Hey Hey Guys! I’m back! Today, I’m sharing all about our Spring Break trip from a few weeks ago. We left out Wednesday mid-morning heading South with our fifth wheel camper. We were headed to Carrabelle RV Resort in Florida. We arrived, got everything set up and headed to get some food by the water. It was nice, but it was windy sitting on the patio. We headed back and sat by the fire, for a little while, before going to bed early. We were all tired. I did read some in my book though. I really loved this book! Today, I’m sharing a random Day in the Life on a Thursday. I tried to remember to document throughout the day, but of course, I got a little sidetracked. Up bright and early and ready to get the day going. Washed my face with this. Moisturized with this. Makeup going on. Hair getting straightened. **Healthy Chicken Piccata** {3.2.2022}
If you’re in a crunch, and need something fast and easy, this is a great go-to recipe. I cooked it for the first time Monday night, and it was very tasty and satisfying. I adapted it from this recipe. INGREDIENTS: 1 lemon 1 pound boneless skinless chicken breasts ¼ cup all-purpose flour (I used whole wheat flour) ½ teaspoon salt ½ teaspoon ground pepper 1 tablespoon plus 4 teaspoons extra-virgin olive oil, divided 1 large sweet onion, sliced 1 clove garlic, minced 1 cup reduced sodium chicken broth ¼ cup dry white wine (I did not use wine, I just used extra chicken broth) 4 teaspoons drained capers ¼ cup chopped parsley INSTRUCTIONS: Prepare Lemon and Chicken: Cut lemon in half.
